THINK OUTSIDE THE BAG RECIPES Sticky Bechamel Chicken: Prepare Sticky Fingers Original scones per package directions. Prepare chopped, cooked chicken meat. Bechamel Sauce 12 tablespoons butter 6 cups milk 12 tablespoons flour Salt, tarragon and ground pepper Melt butter in a medium pot. In a separate pot, heat milk but do not boil. Add flour to melted butter and mix well (it will form a paste). Slowly add heated milk to butter mixture, a little bit at a time, stirring constantly over medium heat. Add salt, tarragon and fresh ground pepper to taste. Cook until the mixture comes to a boil and has thickened, then remove from heat and add chicken. Split baked scones and top with bechamel chicken sauce. Serve with a fresh garden salad. Sticky Strawberry Shortcake: Prepare Sticky Fingers Original scones per package directions. After baking, split open and fill with heavy, whipped cream and fresh or frozen strawberries, or any one of your favorite fruits will do. Serve as a dessert or any time. Sticky Breakfast Biscuits: In mixing bowl, combine Sticky Fingers Garden Herb scone mix with 1 cup diced cheddar cheese and 1 cup crisply cooked bacon. Stir in 3/4 cup water and lightly knead. Roll out on wax paper and cut with a biscuit cutter, then place on greased baking pan and bake in preheated oven at 350º until golden brown. Serve with scrambled eggs, eggs over easy or sunny side up. Sticky Chocolate Chip Balls with Orange Glaze: Prepare Sticky Fingers Chocolate Chip scones per package directions, then roll into bite-size balls and bake until golden brown. Orange Glaze: 2 tablespoons unsalted butter 2 cups powdered sugar, sifted 2 oranges, juiced and zested Combine butter, sugar, orange zest and juice over a double boiler. Cook until butter and sugar are melted and mixture has thickened. Remove from heat and beat until smooth and slightly cool. Drizzle or brush on top of scones and let set until glaze has hardened. Serve with ice cream or fresh fruit compote. Other recipe variations for either our fruit, sweet, or savory scone and bread mixes include: Mixing-In addition to or in place of water, you can use milk, buttermilk, whipping cream, sour cream, cream cheese, or any flavored syrup, extract or zest, just as long as the amount of liquid does not exceed the required amount. Toppings-Powdered sugar, brown sugar, sweet cocoa powder, coconut, Parmesan cheese, and a variety of sauces, gravies, frostings or glazes. NOT SO TRADITIONAL FRUIT CURD RECIPES Sticky Lemon Curd Chicken:
1 1/2 pounds chicken breast 1 cup Sticky Fingers Lemon Curd 1/4 cup all-purpose flour Salt 2 tablespoons vegetable oil 1/2 cup chicken broth 1 lemon zest 2 scallions
Cut the chicken into chunks and lightly coat with flour and a dash of salt. Add oil and chicken to a large skillet and heat until golden brown. Remove chicken from skillet and scrape out any drippings, then add chicken stock and lemon curd to skillet and whisk lightly until blended. Add the browned chicken back to the skillet and simmer the mixture for 1 to 2 minutes, or until the sauce has thickened and the chicken pieces have cooked through. Remove from heat and add the scallions and lemon zest, then toss until all of the ingredients are evenly coated with sauce. Serve on a bed of brown or wild rice.
Sticky Fruit Curd Trifle:
1 pint fresh strawberries 1 pint fresh blueberries 1 pint fresh blackberries - or one large bag of frozen mixed berries 2 cups sweetened whipped cream 8 ounces Sticky Fingers Lemon Curd or Orange Curd, chilled 1 prepared and sliced lemon pound cake or packaged individual sponge cakes (3 inch) 1/4 cup almond liqueur or Grand Marnier liqueur (optional) 1/4 cup sliced almonds or fresh mint leaves
In a saucepan, heat the berry mixture and liqueur until the berries are warm, then let cool. In a mixing bowl, gently fold the whipped cream into the chilled lemon or orange curd until it becomes a light mousse texture. In a glass trifle bowl, place one layer of cake, then spoon a layer of the curd mousse over the cake, and then spoon in a layer of mixed berries over the curd mousse. Repeat the layers until all of the ingredients are used up. Garnish with your choice of fresh mint or almonds. Chill before serving.
Sticky Curd and Mustard Sauce:
1 rounded tablespoon Sticky Fingers Lemon Curd 2 tablespoons white wine vinegar 2 teaspoons Dijon style mustard 1/3 cup extra-virgin olive oil
In a small bowl, combine lemon curd, vinegar and mustard, using a whisk, then whisk in olive oil in a slow stream. Season with salt and pepper to taste. Ideal with seafood or pork.
Sticky Curd and Yogurt Sauce:
12 ounces low-fat vanilla yogurt 6 ounces Sticky Fingers Lemon, Orange or Cranberry Curd 1 tablespoon pure vanilla extract
In a small bowl, gently fold ingredients together and chill. A perfect topping for fruit, shortcake, or cobbler. And during the holidays, try Cranberry Curd and Yogurt Sauce with your Thanksgiving dinner!
