1-¼ cups (½ package) Marie Callender’s Corn Bread Mix
2 large Eggs
2 tablespoons melted Butter, cooled slightly
1 cup Sour Cream
1 can (8.75 oz.) Whole Kernel Corn, drained
1 can (8.25 oz.) Cream-Style Corn (1 cup)
¾ cup shredded Sharp Cheddar Cheese
- Preheat to 375° Spray an 8”x 8” casserole dish or pan with baking spray.
- In a large bowl, whisk eggs until well-blended. Whisk in melted butter until combined. Gently whisk in sour cream, corn, and cream style corn until uniform. Stir in corn bread mix until blended. Fold in cheese. Pour mixture into prepared casserole or pan.
- Bake 35-40 minutes, or until casserole is set and golden brown on top.
Makes 6-8 servings
Add any or all of the following with the corn: finely chopped jalapenos or roasted red peppers, cooked sausage, chopped scallions, cracked black pepper, etc.
